Sarson Ka Saag
The mustard greens...wah ji swad

Mustard leaf 750 gms.
spinach 250 gms.
White Radish leaf 100 gms.
Bathua 30 gms.
Ginger Dice 3 pieces
Green Chilli 8 pieces
Rice 45 gms.
Mustard Oil 60 ml
Salt as required
Maize Flour 15 gms.
White Butter 200 gms.

- Put all the ingredients, except maize flour and white butter, in a handi/pan, add water 2 litres bring to a boil, reduce to low heat and simmer until the greens are tender(approx 1:45 hours).
- Remove handi/pan from heat churn with a madhani(wooden cherner with which lussee is churned).
- Return handi/pan to heat, add maize flour, cover and simmer over very low heat, stirring at regular intervals, for 1 hour.
- Remove and adjust the seasoning.
- Remove to a bowl, garnish with large dollops of butter and serve with makki ki roti.
