Panakam....
A cooling, summer drink from Tamil Nadu

Jaggery 1 Cup, grated
Water 3 Cups
Lemon 2 squeezed
Sonth 1 ½ tsp
Green Cardamom 6, crushed
Pepper pdr ½ tsp
Rock Salt ½ tsp
Mint Leaves a few,

- Heat one cup of water till luke warm.
- Add the jaggery and stir until dissolved.
- Strain through cloth to remove any mud or
impurities.
- Cool.
- Add all the remaining ingredients and chill thoroughly before serving.
- All the ingredients may be adjusted to taste.
