Mixed vegetable Pickle ..

Mili sabjion ka Achar



	Carrots,Cauliflower		5 kg.
	& turnips
	Vinegar				1 ltr.
	Til Oil				60 gms.
	Tamarin				1 kg.
	Jaggery				750 gms.
	Chillies			250 gms.
	Salt				1 kg.
	Cloves				30 gms.
	Fenugreek Seeds			30 gms.



  • Soak tamarind in vinegar for three hours.
  • Wash and peel the vegetables and cut them into convenient size.
  • Grind the chillies, ginger, cloves, and fenugreek seeds.
  • Heat the oil and remove from the heat.
  • Add ground spices and jaggery.
  • Stir well, and add the vegetables.
  • Cook till tender, on a low fire without adding water.
  • Remove from heat and add strained tamarind extract and vinegar.
  • Fill into jars keep in the sun for few days.
