Gajar ka Halwa

The famous Carrot Pudding



	Carrots(grated)  	1 kg.
	Milk    		1 litre
	Sugar  			200 gms.
	Desi Ghee 		100 gms.
	Cardamom 		3 gms.
	Almonds 		16 gms.
	Pistachio 		10 gms.
	Raisins 		24
	Khoya	 		60 gms.




  • Boil milk in a pan(wok), add the grated carrots, reduced to medium heat and cook, stirring constantly, until carrot are tender and most of the liqud has evaporated.
  • Then add sugar and stir until dissolved and the liquid evaporates.
  • Now add ghee and stir- fry for 3-4 minutes .
  • Remove add cadamom, and stir.
  • Remove to a silver bowl, garnish with khoya, almonds, pistachios and raisins, Serve hot.
