Tomato Chutney....

Tamater ki Chutney

	 Tomatoes		1 kg
	 Sugar			600 gms.
	 Onions			1 big
	 Ginger			1 inch
	 Salt			1½ tsp.
	 Garlic			6-8 cloves
	 Red Chilies		1 tsp.
	 Garam Masala		1 tsp.
	 Acetic Acid		6-8 drops
	 Oil			1 tbs.	

  • Use ripe red tomatoes.
  • Blanch the tomatoes, i.e. steam them in a little water and peel them.
  • Chop the onion and garlic, crush the ginger.
  • Heat the oil in an aluminium pan and fry the onion, garlic and ginger till golden brown.
  • Add tomatoes, sugar, salt and chillies and cook to a thick consistency.
  • Add garam masala and acetic acid and cook for another five minutes.( in case you have no acetic acid, you can add vinegar to taste).
  • When cool, put the chutney into jars.
