Famous Eggplant dish from Punjab

	Large Brinjal	 	500  Grams
	Sliced Onion 		2  Nos
	Tomato 			2  Nos
	Jeera			2 gms.
	Ginger Chopped		5 Gms.
	Garlic cloves 		5  Nos
	Red Chiili Powder	5 gms.
	Turmeric Powder		2 Gms.
	Coriander Powder	2 Gms.
	Chopped Green Chillies	2 nos.
	Butter			25 Gms.
	Oil			15 ml.
	Ginger Juliennes	a few
	Chopped Coriander 	1  Bunch


  • Make small slits in brinjal & roast the brinjal on the flame.
  • Remove skin & mash with garlic.
  • Heat oil & add sliced Onion and saute till brown.
  • Add the Tomatoes & chopped green chillies & ginger.
  • Add mashed brinjal, chilli powder, turmeric powder, coriander powder & salt.
  • Bhunao till Eggplant is cooked. Serve Garnished with Coriander Leaves.
  • Note Serves 4, Can be eaten with Roti or Rice
